I hadn't made any pizza dough so I used cheap-ass whole foods pizza dough. Toppings are pepperoni, jalapeno peppers, onion, and spicy New York (?) style sausage that I gave a pre-cook.
Cheese is 75% mozzarella, 12.5% cheddar, 12.5% jack. Sauce is blended San Marzano canned whole tomatoes simmered with garlic, oregano and crushed red chilies and some basil.
Pre-heat 1/4" pizza steel for 1 hour @ 550 F and then broil for the bake which took under 3 minutes.
